This is a refreshing and incredible tasting natural yogurt side dish that can be knocked up in just 5 minutes.

My Dad has been making this for me and my sisters since we were kids. Every time, we would go crazy for it and fight over who gets to lick the bowl clean - we still do!

Ingredients

  • 500g Natural Yoghurt (Greek, low-fat, fat free. Whichever you prefer. I personally like a think Greek yoghurt.)
  • 20g Fresh Mint
  • 1/2 Cucumber
  • 1 sprinkle of Blue Cornflower (Optional for garnish)

Method

  • Start by separating the mint leaves from their stems and discard the stems.
  • Chop the mint as fine as you can, don't be lazy!
  • Finely chop the cucumber, if you would prefer to peel it first, go ahead.
  • Add all of the ingredients to a mixing bowl and give it a good mix.
  • Give it a taste and add a twist of salt at a time to your suiting.
